Styling notes
Leave part of the grate uncovered — you want the mat for the delicate things and bare bars for anything you want char marks on. Keep them off direct flame and within the temperature rating; that's what shortens their life, not use. Lay them flat to store rather than folding, since a crease becomes a permanent ridge food catches on.
